Cocadas
Typical
of Buenaventura, Valle
Cocadas are a
recipe that is part of the Afro-descendant tradition that dates back to the
time of slavery, becoming one of the traditional sweets of the coastal areas of
Colombia. The coconut seemed to gain ground among the other mamoncillo, tamarind
and guava-based sweets, which makes it clear that it is the quintessential
flavor of the Caribbean. They managed to spread throughout Colombia until
reaching the Valle.
How to prepare them?
Ingredients:
- 2 grated coconuts.
- Water.
- 750 gr of sugar or panela.
- 4 ground cloves.
- Cinnamon.
Process:
- Bring water to a boil.
- Add the cloves and cinnamon and mix
- Boil a little more, add the panela.
- Stir constantly until panela is melted.
- When the mixture thickens, remove the cloves and cinnamon and add the coconut.
- Stir with a wooden spoon until the mixture darkens and thickens.
- With a spoon scoop out small portions, put on a moistened tray and let cool.

ready, to enjoy.
